“Txangurro” (crab) cake and it`s coral mayonnaise.

Truffle egg, foie and boletus in cocotte.

Roasted scallop, cauliflower cream and citrus.

Cod fish slices with “pil-pil”emulsion on “ajoarriero” (garlic, pepper, and tomato sauce).

Roasted boneless lamb shoulder, potato cream and plum.

Warm puff pastry with custardcream, peach jam and vanilla ice cream.
